We are searching for a Chef Head Cook for a new Restaurant and Tavern located in Sachse,Tx. Duties will include: Plans, directs and supervises the activities of kitchen staff * May, at times, personally perform food preparation and cooking activities. Implements correct procedures for: * food receiving and storage, * food handling, preparation and distribution, * kitchen sanitation and safety, * equipment operation and cleaning Requisitions and determines delivery dates of food and supplies from storage areas, to meet daily menu requirements. Maintains food inventory control systems: * monitors incoming supplies for quality and quantity, * notes food surpluses, * insures stock rotation. Provides and supervises on-the-job training and arranges for in-service and advanced training for all employees assigned to his area. Insures that sanitation, housekeeping, and safety standards meet the requirements of applicable federal, state and local rules and regulations. Inspects food supplies for deterioration, and reports findings to immediate supervisor. Food Production Schedules production of food according to approved procedures and portion control methods. * Assures that food will not be prepared too far in advance and that the meal schedules will be met. Supervises food production to insure: * the quantity and quality control of menu items, * that proper food handling procedures are followed at all times. Demonstrates proper preparation and production procedures by use of standard formula and departmental operations manuals. Checks food service for portion control, serving temperatures, food quality, and sanitary procedures. Supervision of Staff Provides oral and written instructions to Food Service Workers I & II regarding: * food to be prepared, * method of preparation, * proper equipment to be used * special requirements to complete the task. Sanitation Inspects storage areas for evidence of vermin, insects, and molds and arranges for their eradication if present. Insures that all refuse is disposed of promptly, using appropriate containers. Inspects food storage, preparation and related areas to insure these areas are maintained in approved sanitary conditions. Checks all equipment used in preparation of food to insure that correct procedures and sanitizing methods are used to prevent contamination. Schedules cleaning duties of kitchen and storage areas on a periodic and as necessary basis to insure that sanitary conditions are met.
